Sake Sunday afternoon


Holly, Nita and I took advantage of Vintages' March 19th release of sake and enjoyed a Sake Sunday afternoon.

in our tasting, all sake from HAKUTSURU SAKE.  check out the website - chock full of sake info.  I am having difficulty finding an aroma wheel for sake.  are there any out there?  if so, would someone please send me a link?

of course we started off with a glass of sparkling:  ANTECH GRANDE RÉSERVE BRUT BLANQUETTE DE LIMOUX 2008  

LCBO Description:  This Midi fizz is made mostly with the local Mauzac grape, plus a touch of Chardonnay. It is also from a single vintage - somewhat of a rarity in Limoux fizz. Very pretty notes of honeysuckle, peach, custard pastry, and toast. This dry, fresh, very well-balanced bubbly is a terrific value and is ideal as a refreshment between courses, or paired with raw oysters.

our tasting note:  a very good way to start off the tasting.  cleanse the palate and simply enjoy the bubbles.  LCBO description pretty much covers it.  I would buy this French sparkler - $15.95



* pairing noteHAKUTSURU ORGANIC JUNMAI and HAKUTSURU JUNMAI GINJO both paired with:  Nita provided a selection of sushi from T & T supermarket, wasabi peas, and Holly made chicken satay.



HAKUTSURU ORGANIC JUNMAI  (green bottle) - we served this at room temperature

LCBO Description:  Hakutsuru was founded in 1743, and translates as 'white crane.' This graceful bird represents the elegant taste and quality of their sake. It is made from a 250-year-old recipe This smooth, full-bodied Sake can be served hot or cold. When served hot, it matches well with dishes featuring soy sauce, or with Tempura. When served cold it is perfect for halibut sashimi, or crab rolls.

our tasting notes:  clear; mellow & elegant nose.  on palate:  vanilla custard undertones.  paired very well with sushi.  Crème brûlée/vanilla custard notes with food match.  at the risk of swaying your opinion:  this was favoured by all 3 of us.


HAKUTSURU JUNMAI GINJO (blue bottle) - we served this at room temperature

LCBO Tasting Note:  A full and flavourful sake, whether served at room temperature or chilled. Filled with floral, lemon and peach notes. Dry and quite delicious. Ideal for salmon in a teriyaki sauce. (VINTAGES panel, June 2010)

our tasting notes:  anise/fennel nose; fruity, peach, melon & floral upon tasting.  this too paired very well with sushi. 


HAKUTSURU SAYURI NIGORI (pink bottle, dessert) - we served this chilled & paired with fresh strawberries and kiwi

LCBO Tasting Note:  Milky and creamy dessert sake with aromas of vanilla bean, rice pudding, mocha and sweet melon. Best served chilled, bringing the sweetness into delicious focus. A fine finish for a great Japanese meal. Shake it before opening. (VINTAGES panel, June 2010)

our tasting notes:  cloudy/milky appearance; fuller texture; not sweet as we might be lead to think by "dessert sake".  this reminded us very much of first one, HAKUTSURU ORGANIC JUNMAI.  it matched well with the fruit, especially the strawberries.

note:  the alcohol was more apparent but in fact lower (12.5%) than other two (14.5%).  we thought this may be due to temperature:  we served dessert sake chilled versus room temperature.
